Desperat-o Burrito

So this recipe is rediculously easy and my hopes of sharing it is to inspire you to re-create this similar but with your own favorite produce/beans and other goodies. I’ll list some delicious options that I would have used if I had it available, but the whole point of this burrito is to create something with what you have available.

I used, 2 big shiitake mushrooms, 1 big red onion, less than a half of cabbage, 6 garlic cloves because garlic = life, kidney beans, 1 big lemon and flour tortillas.

Pre-heat the oven to 375 rinse your kidney beans, add olive oil, salt, paprika and most of the juice from half of that lemon. Lay them out flat on parchment paper, throw them in the oven. Slice up the garlic, heat Grapeseed oil on the pan and once hot add the garlic, let cook for 3 min then add sliced onion.

Cook for 5 minutes add sliced cabbage. Add the rest of the lemon juice and salt to mix and cook, tossing every few minutes prevent burning on one side. While that’s cooking heat Grapeseed oil in another pan slice the mushrooms and add once oil gets warm. Add 1 tablespoon of soy sauce and cook until soft. I added my herbs to my veggie mix at the end to prevent burning. I used basil, oregano and parsley.

By the time the mushrooms are finished cooking everything should be about ready. I personally like my veggies a little crispy so I cooked my veggies until there was browning on everything. The beans shell were crispy but still pretty tender on the inside. Layer your veggies first, mushrooms on top, then finish with the kidney beans. Put fresh pepper on top and add your favorite dressing. I used left over lemon tahini dressing. That’s my go to dressing for legitimately everything.

You can make spicy mayo, I shared the recipe for that in my flautas post, or siracha or hot sauce. I also would recommend Nana’s Nutty Kitchen’s sour cream! (You can look them up on Facebook and Instagram!) Now what I’d recommend using if you have in your pantry.. Peppers, broccoli, diced potatoes, any type of mushroom because they’re flipping amazing, any bean would be delicious if you don’t have kidney beans, any type of rice, cous cous, quinoa, raw diced tomatoes, jalapenos, avocado, throw salsa in this wrap if you have any laying around the house. I hope this post can inspire you one night when you come home late and you think you don’t have a meal figured out. We all get pretty desperate sometimes, but burritos are pretty awesome at fixing almost anything! Enjoy bay bays!
